I have never been a huge fan of beets. However, I recently had a fabulous beet salad at a restaurant we really like, called Memphis. And then today at the Farmer's Market there were these beautiful beets. I am going to have to try something with them. Roasting sounds good. Until then, they look pretty nice just like this.
